Raspberry Cheese Cake

  • 180g
    digestives biscuits
  • 80g
  • 1/2 tsp
    ground ginger
  • 1 tsp
    ground cinnamon
  • 200g
    frozen raspberries
  • 4 tbsp
  • 480g
    Benecol Original Soft Cheese (3 packs of 160g)
  • 100g
    icing sugar
  • 500g
    ricotta cheese
  • 1 heaped tsp
    vanilla paste
  • 6 leaves of gelatine
  • 12 fresh
  • 150g
    double cream


  1. Mix base ingredients in a bowl to an even mix
  2. Press mix at the bottom of a form (with removable boards) and set in refrigerator
  3. Set gelatin leaves first into cold water and then to small amount of warm water
  4. Mix together all other filling ingredients
  5. Add gelatin liquid to the filling mix
  6. Pour filling on top of base
  7. Set in refrigerator overnight
  8. Decorate the next day with berries and whipped cream
