Puy Salad with a Delicious Honey & Mustard Dressing

1/2a large cucumber, chopped

8cherry tomatoes, halved

2spring onions, sliced large handful of fresh parsley or coriander, chopped

1Benecol Original Yogurt drinks 67.5ml

1teaspoons of honey

1/2 tbspDijon mustard

Method
- In a large bowl, combine all the ingredients
- For the dressing: in a small bowl, whisk together the Benecol Original Yogurt drink, Dijon mustard, and honey. Season well with freshly ground pepper to taste. Drizzle the dressing over the salad, then toss gently to mix well.
- Serve the salad immediately with the Benecol Light Spread seeded rolls
